The story
We live on an island where you eat extraordinarily well and where, even so, it is hard to really meet anyone new.
MESA came out of that contradiction. Not from a business idea, but from one specific night: a borrowed table, a chef who was a friend, twelve people who did not know each other, and a conversation that stretched to two in the morning. By the next day there were three new projects among people who had been seated together by chance.
We decided that chance could be designed. Not the conversation —that cannot be forced— but the conditions: the right chef, a space that looks nothing like a restaurant, and a list built with care. That is all we do.
A table is not furniture. It is the one place where nobody finds it strange to spend three hours talking to a stranger.
How we work
01
We choose chef, space and date weeks ahead. No combination repeats.
02
The chef designs four courses with pairings. We do not weigh in on the dishes; we weigh in on the night.
03
We read every request and build the table by hand. We look for a mix, not a matching set.
04
One long table whenever the space allows. The chef presents each course. Nobody sells anything.
